Great Starter Vegan Cookbook for Novice/College Cooks as well as the rest of us

Nicholds writes the Vegan cookbook she wished she had had when she was in college and first learning to make her own meals all the time once she was off-campus and no longer eating on the college food plan. Since this is a cookbook geared for College Students, there is some great material early on that are about Vegan eating, shopping, and pantry stocking basics. Since this is the very target audience of this cookbook, the coverage of Basics really is important where with other cookbooks which weren’t per se targeting Beginners, I found extensive coverage of that superfluous elsewhere. Here, it matters and is right on target for the precise audience for which this cookbook is intended. And on that note, since this is a cookbook targeting Beginner young adult cooks, perhaps new Vegans, or Veg tending cooks, having a lot of photos would really have been useful. But this cookbook sadly is scarce on the number of illustrative photos. Thankfully, for all of us, including all those new cooks and new vegans, there is Nutritional Information provided for each of the recipes so they can learn that at the same time as meal preparation and grocery shopping. She even provides some tips about making use of the often required Meal Plan many colleges make students opt into for at least their first year if not also their second year. This cookbook has a terrific layout including not only the Nutrition Information at the bottom of each of the recipes but also just above the title of the recipes is a little faux Red Crayon writing of the Per Serving USD price. How great is that when you’re managing a strict food and grocery budget? My fiancé is going to LOVE all the chickpea based recipes in here including a Vegan variation on the classic Italian Wedding Soup. Seeing as college students, just like the rest of us, definitely have a sweet tooth, the 15 Desserts recipes, including Nice Cream in 3 different ways, all look terrific. I appreciate that the recipes she selected to feature all look easy to make, things like cookies, dessert bars, and Microwavable Brownie Mug cake. The Table of Contents is as follows for these 145 Vegan Recipes: Chapter One: The College Ready Vegan All about cooking tools, your kitchen, and stocking your pantry. Chapter Two: Breakfast Yummy smoothies, Overnight Oats (5 ways!), and muffins and cups including a Chickpea Omelet cup. A woman after my own heart, she features an Oatmeal Raisin cookie for Breakfast! Chapter Three: Soups and Stews I could hunker down here and eat happily all year long. I love making a vat one day over the weekend and having food at-the-ready for more meals, just needing to heat them up. For college students, this chapter is going to be great. Chapter Four: Sandwiches and Salads Chapter Five: Snacks & Sides Looking forward to playing with BBQ Cauliflower Wings Chapter Six: Main Courses Pasta galore as well as legume loving luscious recipes Chapter Seven: Desserts (!!!) Chapter Eight: Staples, Sauces & Dressings This is really a great chapter for assisting new cooks to think to prepare their own sauces. Additionally, being Vegan, managing your own sauces and dressings means you can personally manage making sure to avoid including any flesh-based ingredients. Prevents being dependent on jars and bottles of mass production. Make it yourself. She closes with Food Preparation teachings and guidelines as well as wonderful secondary resources like Ghandi and the rise of Veganism. I’m going to have to read that one personally. Highly recommend! I really love this cookbook. It’s just terrific for colleges students cooking on a budget, both for those wanting to fully embrace veganism and for those wanting to eat veg at least weekly or something. It’s just perfect for young and new cooks. I just wish there were more helpful photo images. Some of the photos I include are a little blurry on purpose so as not to give away recipe details, etc, just to give you and idea of what the recipe pages look like, etc. I hope you found my review helpful for you in selecting this book for yourself or as a gift to a new cook. Needs Pictures of Recipes, But Otherwise A Good Cook Book

This book lacks photos of each recipe. We really prefer recipe books with pictures. But, the recipes look enticing. I really wanted a hard cover, but this book looked good so I ordered it even though it is paperback. The cover is thick and durable. It even has a nice feel to the cover, as though it has a waxy smooth coating on it. I recommend this book, but do wish it had photos of the recipes and that it was a hard cover.

Chef's school students, maybe

I don't know of any college student, including me, who has the time or space for all of this. Recipes can have 13 ingredients at at time. Many of the recipes are family size, which she says can be shared with friends or kept as leftovers. Why? Because our refrigerators are so large?The start-up stock-up is expensive and complicated, and the user will need more cupboard space than is realistic. There are many "staples" & the cost per person doesn't factor in buying all these things to begin with. I see the given times to prepare are like cooking show fantasies It's a cookbook. I think calling it "college" helped sell this cookbook, and some recipes are for a serving size of one, but I won't be using this the way it's advertised, if at all. UPDATE: Amazon accepted my return request and 48 hours later, I got this reply from the seller: " If you would like to return your item you can ship it to the address below (at your own expense) within the next 5 days. Please be sure to include the packing slip and reason for return. Upon receipt of the returned item we will refund your account for the cost of the item only minus a 20% restocking fee. We are sorry but we can not refund the shipping charges. Please note that if you use the Prepaid return label provided by Amazon, the return shipping fees will be deducted from your refund." Between shipping cost & 20% "restocking" fee, I'd be lucky to break even. Shame on them. A 2 star book from a 1 star seller

There are some good recipes in the book for one or two people. However, she uses oil with a heavy hand, when there is no reason to use it at all. It's easy to saute with water or broth or use applesauce in baked goods. Oil is so passe. That said, I have converted a couple of the recipes to oil, salt, and sugar-free. Still, I expect plant-based cookbooks to follow common sense good health guidelines for obvious reasons.

Not Just for College Students!

What a pleasant surprise! I ordered this book for my granddaughter because she is Vegan and soon to be college age. At the time I was teaching a transition to plant-based cooking class to a group of elderly men and women. Although this cookbook wasn't the reference book used, it sure came in handy when the group started asking how do you say Quinoa, much less spell it. This is a wonderful cookbook for those who are just beginning, at any age. Enjoy the simplicity and really cool way she lets you know if it is to share, cook, or a one pot meal. My granddaughter and I plan to tackle every recipe and put Nonni's special touch on them. It will be a treasured memory for the both of us. Oh yeah! the cost per serving is definitely for the parent who is paying for that college education!.

Great looking cookbook for my daughter

I ordered this for my daughter, who just graduated college, as her first cookbook. She was very excited when she saw the recipes as I kept hearing her say things like, “Alright! Pizza!” She hasn’t cooked me anything out of it yet but I’m looking forward to seeing her try out recipes for the first time. I feel confident that this cookbook will serve her well when she moves out on her own...eventually. This cookbook is such a wonderful idea! Heather does a great job getting the younger generation off of processed foods and into healthier eating.

This book is awesome!

My sister is vegan and about to start college so I got this for her as a birthday gift. It is so cool! It shows you the cost per serving on each recipe, as well as which recipes are dorm friendly, easy to make ahead of time and save, and a variety of other "tags" that help (gluten free and things like that). I am not vegan but I might buy a copy for myself anyway - the recipes all look so good! There is a lot of variety and most of them don't require weird ingredients you have to buy at health food stores and stuff like a lot of vegan cookbooks. Definitely would recommend!

Everything looks delicious and easy to prepare

Cute, easy, inexpensive and fun recipes. Presentation and photos were wonderful. All the dishes look tasty. I purchased as a gift and I do hope the college student enjoys it.

Great if you have a good amount of cook options

This book Is a great idea but what I hate about it is the method of cooking is unorganized say I am at all in a mood what can I make in the croc or the microwave what is non cook able for my day out it is not organized for that some things need a stove top or blender and I am not set up for doing such dishes so organize the cook methods I may rebound this book so I may use it I have no patience for it right now tho

Super approachable vegan

Easy, quick and unpretentious recipes. I like that this book doesn't require any "fancy" ingredients or multi-step preparations. Has made transitioning to more of a plant-based diet very approachable.

I’m no longer in college. I am 66 and just want recipes for easy, healthy and inexpensive meals.

Easily my favorite vegan cookbook

I absolutely love this cookbook! The recipes are often quick and easy to make; however, perhaps my favorite part of this book is that Nicholds includes cost per serving and nutrition facts for each recipe. You don't need that many tools to make these, and a lot of them are "one pot" recipes. There are tons of ways you can customize recipes by adding more spices and things, and there are a wide range of recipes as well, from breakfast, main courses, deserts, sides, and pantry staples.

Great for beginners

Bought this for my daughter before she heads off to college. She doesn't have a ton of cooking experience so this is great practice for her before heading out on her own. I love to cook owning an obscene number of cookbooks and figured I would not benefit from this one but I've actually made several dishes myself and was surprised how much I enjoyed them.

Easy and delicious

We've decided to go more plant-based this year and this cookbook is great, not only for college students, but also for those who want to give vegan a try without blowing the budget. We've tried several recipes and the ingredients are easy to find and the recipes are simple to follow and the resulting meals taste great! There are recommended options and substitutions which are nice. The Buddah Bowl is my fave!

I love this book

I’m a college student and newly vegan. The recipes in here feel catered to my lifestyle and I use it a lot. I’ve been enjoying a chia seed parfait some mornings and the routine of making a batch has been easy and I know I’m eating healthy too. I love she includes prices and also nutrition I thought it was really thoughtful and thorough. I recommend.

Lots of delicious easy to do recipes

We gave this cookbook to our granddaughter who is a vegan attending her first year in college. She said, “Lots of easy to do recipes. Good serving sizes for every meal! Made a stroganoff meal last week that was delicious. Been trying to cook one recipe a week for family”

Misrepresented

I just received this book today. While it looks like it may have some good recipes, I specifically ordered it because it’s described as being “illustrated,” which it is not. I also figured any cookbook for college students would be simple in the number of ingredients and simplicity of preparation. Many of the recipes are far more complex than anyone living in a college dorm could possibly prepare there. I want recipes that are easy, fast, and illustrated. This book is misrepresented in its title & description. I haven’t decided yet if I’ll keep it.

This book is excellent - simple ingredients, wonderful recipes. I hate when you go to make a recipe & it calls for fancy, expensive, hard to find ingredients... this book proves that you can eat satisfying, plant-based meals without breaking the bank. I believe it's perfectly accessible for all age groups as well. In fact, I've purchased additional copies for both my dad & younger siblings!

Good cookbook for college students and beyond

I got this as a present for my granddaughter who is a freshman at Cal. Next year she will be in an apartment, so she will need cookbooks. Also she is close to vegan, so this one is perfect.

Good book!

I am not a college student nor am I a Vegan. Why am I reviewing this cookbook? Because I found this cookbook could be beneficial to anyone who is a vegan, maybe cooks for one or two persons or someone who just wants to eat a meal that has no meat. The cookbook focuses on whole foods, nothing processed. There are 145 easy to prep and prepare recipes. What was really cool about this cookbook is that the author broke the recipe down as to what the cost is and includes this with the recipe. This to me is so helpful. So back to who this cookbook is aimed at, the College Vegan, the recipes are perfect for the college person, from stocking the pantry to staples. The recipes range from breakfast, soups, and stews, Sandwiches and Salads, Snacks and Sides, Main Courses, Desserts. No fake meat!!! These recipes can be cooked in a full kitchen or a hot plate. Some of the recipes I would not make because I am not a Vegan, but there are some that sound really good that I think I could even tempt hubby! I highly recommend this cookbook! Inexpensive, creative, easy-to-prepare recipes

The College Vegan Cookbook by Heather Nicholds was a delightful surprise as I not expecting to find so many yummy sounding recipes that were inexpensive to prepare. Best of all the recipes are tagged with phrases such as allergy friendly (no nuts, gluten or soy); dorm room friendly (requires only a microwave, electric kettle, or hand blender); good for sharing (makes a batch to share with friends). Another bonus was how the author included the price per serving with each recipe. I also liked her explanation of what vegans eat and a key nutrient list showing foodstuffs found in the vegan diet. I liked her equipment tips and how to stock the pantry ideas. You will find plenty of color photos illustrating her cookbook. Some of the recipes you'll find include: Breakfast Burritos Cream of Tomato Soup Ramen Noodle Bowl Personal Pizza One-Pan Baked Fajitas Caesar salad Strawberry Milkshake Chocolate Pudding Nice Cream, 3 Ways Recommend. Great cookbook!

Heather's cookbook is fantastic not just for college students but even teens or parents of teens. A lot of my vegan food can seem weird to my kids but this book gives recipes that is familiar to them - breakfast burritos, french toast, ramen soup, grilled cheese, pasta salads, Buddha bowls and burrito bowls! The ingredients are easy to find and I love that they are minimally processed. My daughter tends to use a lot of processed fake meats at college to get by but these recipes are quick enough and provide better nutrients. Some other recipes that interest me are- avocado and white bean toast, savory chickpea omelette cups, zucchini and potato hashbrowns, chickpea melt, BBQ tempeh lettuce wraps, roasted carrot salad, cold soba noodles. Proof that vegan recipes can be considered homecooking and prepsred by inexperienced cooks

If you are concerned that vegan means tofu only, you are wrong. What I really like about this book is the fact that is uses a number of proteins in the meals, including non-dairy milk, beans, tofu and lots of vegetables. So one thing is for sure, using this book you will not get tired of one ingredients because the recipes cover a wide variety of meals and ingredients. I really like that the meals in general are home-cooking type meals, such as soups and stews as well as basic tools for meal prep, such as dressings for salads. Of course smoothies are included as well as simple one pan vegetable-based dishes. As a nod to the poor college student, all meals include a prize for each portion, even the cookies. yes, this book even covers cookies since college kids do need some sweets when prepping for exams. Overall, the book is a good guide to send with your college kid to their school. Even if they are not adhering to a vegan diet, this book is good for them since the recipes are simple and healthy! Beautiful Book! Eating Simple, Healthy, Delicious Vegan Food on a Budget at Any Age!

This is a great cookbook for really anyone who is vegan! I loved the section Living the Vegan Life which covers important basics when eating a vegan diet. The About Recipes section really helps one choose the type of recipe they are needing at the time, and this info is also included with each recipe. The nutritional information is very much appreciated. Even though we are no longer college students, we appreciate cooking healthy whole-food plant-based meals that are easy on the budget and are fairly quick to make. And, we do remember what it was like. The section about how to eat vegan when on a meal plan is creative and fantastic as that can be overwhelming. So many favorites will be coming from this book!

This book is so awesome! Makes me want to go back to Uni! With this cookbook, all the bases are covered. There is an informative intro detailing the author's personal experience with going vegan, providing inspiration and encouragement to those who are just starting out. The "Necessary Tools" and "Navigating the Store" sections are very helpful too! As a student I was not sure what tools I needed, and there is nothing worse than getting back from the store with all the ingredients, only to find that I didn't own a loaf pan! This book covers warm comfort food, snacks, and breakfast! The most important meal of the day. The recipes all are stuff college kids like to eat - wings, nachos etc. Not just beans and leafy greens! There is a nice variety, sure to keep you interested, and so many, all packed into 1 book! All of them sound so tasty too! Can't wait to try. One suggestion - in the beginning, there is a section called "Key Nutrients" and noticed that while there are some suggestions listed in brackets for what leafy green examples are, I had to look up what a legume is, and what whole grains are. I thought it would have been helpful to have some examples listed. However when I was researching those things, I learned a lot more reading online, so it was not so bad! Overall, great book. Great idea, to target this demographic as: students ARE busy and this will be super helpful to avoid the "freshman 15" and also can help set students up for a healthy adult life!

a great resource not just for college students!

my college days are long over, but this cookbook ticks so many boxes for my current lifestyle. it's full of quick, inexpensive and flavourful recipes that require only simple ingredients and equipment. what could be better for a busy days on a food budget? it even included a cost per serving! despite being chronically short on time, these recipes feel quickly doable for busy mornings or late suppers. There are plenty of options for substitutions making it versatile and easily adaptable for what you've got in the fridge. and though the recipes keep it simple in terms of excluding fancy flours and sweeteners, i feel i can easily adapt recipes for my whole foods diet as needed. there's even a great shortlist of resources for the thinking vegan on social justice, health, animal welfare and the environment. all-in-all a great resource!

Great recipes for new or experienced vegans. Will recommend.

There's only two bad thingsabout this cookbook. Nowhere does it tell you that most commercial sugars are not vegan, as they are filtered with bone char (even ones that say "pure cane sugar"). Even some long-time vegans don't know that. The other downside is a small one, that many recipes call for hot spices, and some readers my think that is needed for the recipe to taste correct and add it despite not wanting it. On the plus side, there aren't many recipes that rely on tofu or other soy products. That's good because many vegans are like me and have soy sensitivities. Cookbook has some basic instructions for beginner cooks, but for someone that's cooked for a while but never cooked vegan food, this will be more useful. Also useful to people like me, who has been vegan for over 10 years. It will be good for college going people, especially in the dorms. Many recipes have similar ingredients, so you can make many different flavor profiles using the same foods, which is useful for budgets, and small fridge space as in dorms and shared full-size fridges. Many recipes have alterations for somewhat different tastes. Most recipes (like the author mentions) takee about the same time as non-vegan foods. I will definitely recommend this to anyone wanting to cook vegan.

Nice for College-Age Vegans and the Rest of Us

As someone who has been vegan off and on for a while, although I'm always vegetarian, the plethora of college-related vegan cookbooks has always struck me as curious. I know that younger people tend to be interested in veganism, but what truly distinguishes just a regular good vegan cookbook from a vegan college cookbook? Any vegan cookbook could be budget-friendly, use regular grocery store ingredients, or have minimal prep. This book does have all of that, but the author does actually include various hints and tips specific to college-age students who may or may not have access to a kitchen. That's not to say that the recipes in this book aren't good for us non-college-age vegans. Most of the recipes in this book are simple, but they actually sound good. There are several in each section that I want to try. My only real complaint about this cookbook is the lack of pictures. Since it is geared for beginners or relatively new cooks, it really needs photos. Newer cooks need direction, and part of that is visual. What are they actually striving for in a given recipe? That's hard to know without seeing a picture. Other than that, I felt like this book delivered on its promise, a book to help college students be vegan. It just also happens that the rest of us vegan aspirants (and vegans) can use the simple, budget-friendly recipes as well.

Fun, Creative and Delightful

I have followed Nicholds and dabble in many of her recipes. I say dabble because I am not vegan but I have become vegan-ish because of her. she has changed my understanding and debunked all the misconceptions I had associated with Veganism. You do not have to be vegan to enjoy these fun & creative recipes but you will realize that you FEEL better eating her meals. I am not the best cook but her recipes are so simple to follow I have yet to have a failed attempt at one and every bite is a delight. As a former college athlete who consumed A LOT of food, I wish I had this nifty thrifty healthy guide on my bookshelf. The College Vegan cookbook gets 5 stars from me. Some of my favorites from the book: the green kickstart smoothie, Cinnamon-apple toast, Morning Glory Muffins, Cream of tomato Soup, Ramen Noodle Bowl, Apple Lime-Dressed Black eyed pea salad, 5 layer dip, loaded guacamole, cilantro-lime dressing, caramelized bananas and the peanut butter cups to name a few.

Perfect graduation gift for young people! (Vegan or not!)

As a teacher I am seeing a growing number of environmentally conscious students choosing to go either vegan or vegetarian. They have learned that eating meat is taking a huge toll on the Earth and are making an ethical decision to change their eating habits. It is a great trend for young people and the planet. This book is targeted for a young person that is heading out on their own. The list of kitchen pantry items is reduced in comparison to her other book and none of the techniques seem too difficult. I have admittedly not tried every single recipe but the ones I have are easy to follow. I purchased the book because I have Heather's other book and liked many of the recipes and since it is just my husband and I; the small portion servings are handy. Probably the best part of the recipe book is that the nutritional information for each recipe is right there. Many young people make the choice to go vegan but lack the knowledge about having a balanced diet so this feature makes it all easy to follow. Can we talk about the deliciousness? Healthy ramen? Yes please! Chocolate cake in a cup! a lot of the breakfast items are easy and fast to make - including the over night oats as you can make them in 5 minutes and leave in the fridge. I was astounded at how many recipes there were and I am working my way through them! This is a great graduation gift for any young person - vegan, vegetarian, flexitarian!

I am not a college student. I am a mom of 2 and a bad cook. I simply have no patience for mile-long recipes. This has helped me so much--thank you! I needed easy, vegan recipes and this has been the best cookbook to date to help me get (mostly) healthy food onto the table. My whole family rejoices that it isn't cereal night again! LOL! So glad I found this!

LIVES UP TO ITS PROMISE

Tons of easy dorm/friendly recipes, although they do it more complicated as the book progresses. More promising recipes than I usually find in a new cookbook. And if you like pumpkin spice, this is the book for you.
