Gaz Oakley is an exciting young chef who has worked his way up through professional kitchens from his teenage years. Wanting a healthier lifestyle, he decided to change his diet and go vegan. He took up the challenge of finding ways to make his food vibrant and tasty and the results were so impressive that he developed the Avant-Garde Vegan brand to showcase his recipes on Instagram and his vegan YouTube channel.

I am Gaz Oakley, a chef, YouTuber & author originally from Wales in the UK. I first walked into the professional kitchens at age 15 after falling in love with cooking at a very young age. I worked at some of the best restaurants in my hometown of Cardiff for a few years. I decided to go vegan overnight in 2015, and after encouragement from friends I decided to start sharing my vegan recipes on social media, before I knew it I had a huge worldwide following across youtube, facebook & Instagram. I've published 2 cookbooks, vegan 100 & vegan Christmas. I have my 3rd cookbook coming out in April 2020 - Plants Only Kitchen, and this book is all about quick, simply & tasty vegan recipes. My dream is to open a restaurant, I plan on announcing where my first restaurant will be located when I reach 1 million youtube subscribers.

Like many of those who have bought this book, I am a big fan of Gaz Oakley's Avant Garde Vegan blog and YouTube channel, avantgardevegan. This book is gorgeous and takes it another step forward. His recipes are vibrant and full of flavor and can make anyone love a plate of vegetables. Vegan 100 is thick and loaded with full-page photographs that will make your mouth water. If you are familiar with his vegan creations, you will not be disappointed.Not vegan? Serve your fleshy bits on the side on the side if you must, but you'll never miss them with these recipes. Oakley's approach to vegetables seems different than most other chefs and it shows in this cookbook. So much flavor! And the dishes are really beautiful to look at, so they will entice even the most ardent of veggie-haters. There are a few things to be aware of when you use this cookbook, but it's otherwise a perfect intro to veg newbies, the perfect accompaniment to any non-veg food, or a breath of fresh air to old school vegans.Oakley is an English chef, so you may see some references that may seem unfamiliar. The 'look inside' feature above shows how the text is laid out in the UK version, it hasn't been converted any further. I didn't tell them they contained smashed tofu until they finished eating. They assumed it was some kind of cheese. They agreed to try more tofu dishes in the future since it didn't kill them.I made Paprika Baked Beans that calls for canned haricot beans. I've never seen beans called haricot here, but a little research found them to be white navy beans. Easy to find. I used Muir Glen fire roasted chopped tomatoes instead of plain, along with the other ingredients of shallots, garlic, smoked paprika, and a few other tasty bits. It was easy to make and was so good!! I didn't serve it for breakfast, but it would be tempting to start the day out with so much flavor. The beans have a fresher flavor than the baked beans most of us are used to.I could really go on about this cookbook, but this is a review and not a book. I've made quite a few of his recipes that are not in this book as well, always with good luck. I preordered this book last July as soon as I heard about it, and it's everything I hoped it would be. I hope there will be another one!

    A hardcover vegan cookbook with recipes that have ingredients that are simple enough to find that I might make them. Lots of mouthwatering photos of most dishes, like a sort of vegan food network porn. An organization system remarkable enough for me to easily find the type of food I desire. Probably best of all, and I wish all of my other cookbooks did this, a nice shopping list of stuff to keep around, There is a nice big section at the beginning that covers the essentials. This being things used in other recipes, i.e. Vegetable stock, vegan milks, vegan mozzarella, and even Ketchup. Having several other vegan cookbooks, don't think this is just another one of them. This really quite different. A lot of other books seem to focus on "this tastes like meat" and try to resemble and use a lot of meat alternative ingredients. This book is less like those vegan cookbooks and more of instruction on a whole foods, plant based cooking. Other than spices that picture of the shopping bag on the cover is basically the ingredients for these recipes. I have already made several things from this book and look forward to trying a lot of others. Gaz Oakley has a Youtube channel where you can watch some of these dishes being prepared and get lots of good tips on how to do things. Most of these recipes don't require a lot of time to prepare so they are not a daunting task to make.

    I have not had time to perform any of his recipes. I am a chef who is interested in possibly going vegan for a season. I did for a month and was amazed at how much better I felt. I am collecting vegan and vegetarian cookbooks to be inspired for new ideas. That said, I appreciate Gaz and his colors, flavors, and textures that he maintains as I watch him on his youtube channel. He does a good job and yet makes it easy for anyone who is a beginner.

    I decided to try out being a vegan after watching almost a year of AvanteGarde youTube videos. This guy is Dope. His recipes are so simply explained in the book and on YouTube and the ingredients are every day items or easy to find items for the average person like me. No need for Bougie ingredients and many this book and his method are for budget conscious vegans or people who want to dive into a more healthier lifestyle. I recommend this book and everyone to check out Avante Garde Youtube channel and subscribe. I make 2 new dishes weekly from the book and from his channel. He is very entertaining. So sad I missed him during his recent USA tour. I have many cook books but his book is front row and center, on the counter always in my kitchen.

    I watch Gaz's YouTube videos all the time and have tried many of his recipes. His recipes are just like him, true and down to earth, never pretentious. He cooks with real ingredients and is honest with his recipes. I like his recipes because there are just enough spices to be super flavorful but not over the top, and he does not sacrifice flavor just because it's vegan. The viewers/readers can tell that he loves what he does and he respects his fans, his ingredients, and his profession. He incorporates other cultures' food into his recipes, and the result is delicious every time. This cookbook is great for both vegan and non-vegan, even my carnivore friends thought his recipes taste great. I've been around the world and tasted a lot of great dishes, and I think Gaz incorporates the best of all worlds in this cookbook, humanely. Beautiful cookbook, so glad I pre-ordered this book and waited many months for it. Very hard working and talented, great young chef. Hopes he has his own show soon.

    Was handed a notice by my cardiologist to stop eating meat. I have/ had severe angina and a suspected heart attack. So a few months later, I am trying to re-learn how to cook and eat healthy. It’s been a very interesting journey. Reluctant and a very dubious husband. Recently visited Sydney for my son’s wedding after starting the journey to go meat free. Bored and long nights turned me to instagram and videos to help find more recipes. This is how I came across this amazing chef!
    Ordered this book as soon as we landed. What a fantastic book to help with every day life and the transitioning! Thank you so much! It’s an absolute game changer as it teaches you to do “scrambled eggs”, sausages and bacon. To us this is excellent news. The book is full of exciting new recipes to replace our bad habits. For anyone anti vegan… we feel so much better for changing and at the age of 53 there is absolutely no chance of us going back. Chest pain completely gone.
